Chocolate Truffle Making Workshop / Class
Our Chocolate Truffle Making Workshop is a phenomenal introduction to learning how to create tasty chocolate masterpieces over a two hour class. A decadently fun class to experience with friends or loved ones, learn how to make ganaches, a little chocolate history, and take home 20-25 truffles you have made yourself. Details below: Chocolate History and Tasting Do you know where chocolate comes from? When did chocolate make its way to Europe? What is white chocolate anyway? Where is the first place in the U.S. to consume cacao? These and other burning chocolate questions are answered in the beginning of this informative and fun class. After the brief history lesson, taste a variety of single-source chocolates from around the world, just to kick off your chocolate making experience. Tempering Chocolate We take you back to 1898 to learn how to temper chocolate in the traditional French chocolaterie style – tabliering. Learn to feel how the chocolate changes, what tempering is, and how important tempering is to great chocolate making. The drips on the side have to be consumed! Making a Ganache and Rolling Truffles Using your freshly tempered chocolate, you’ll merge it with sweet cream butter to form a ganache, flavoring it with liquors, spices and other inclusions to your own satisfaction. Find out why the inventor of the ganache was considered a fool, and how to make a creamy truffle from start to finish. You’ll hand roll your ganaches then finish them off with chopped nuts, confectioner’s sugar, chocolate powder, and secret additions. Box your Truffles for Home! You’ll go home with your chocolate confections, boxed and ribboned for presentation to your friends and family (or if you tie it tightly, to protect your creations from friends and family). What to Bring Along Yourself! We provide all equipment and raw materials, and even have Joliesse aprons available. If you have long hair, you may want to tie it back (we do provide hairnets) and you may want to leave your jewelry at home (although there is such a thing as edible gold, diamonds do not digest well). Please also wear closed-toe shoes out of courtesy to your fellow classmates. One more tip - we do keep the shop rather cool to facilitate chocolate tempering, so if you feel cold easily, you may wish to bring a light sweater. You are also welcome to bring any special ingredients you may wish to add to your chocolates (such as your own liqueurs). Some Dietary Info! We do use dairy, nuts and soy in the workshops. If you have an allergy to any of these products, we regret that we will not be able to accommodate your participation in our standard workshop. Contact us to set up a private session to learn to make vegan truffles or nut-free options. Info to Notice: Perfect for a truly unique date or special event celebration, the basic chocolate workshop is limited to 12 participants due to size constraints. Minimum class size is 6, so we reserve the right to cancel a class if the minimum number of participants is not met. Reservations are required. No refunds after 24 hours prior to the event. Class may be cancelled or postponed due to inclement weather or if minimum size is not reached.
